Katie Erwin
Position at the College: Undergraduate student; Grounds Department Employee
About Me: I'm a senior at the College of Charleston majoring in International Studies, double minoring in Environmental Studies and Dance. I hope to pursue a future in environmental education and organic agriculture. I enjoy dance, yoga, and exploring the world.
Why I'm interested: I am disturbed by the amount of food that's wasted at events, in restaurants, dining halls, grocery stores and homes, while so many people are hungry- especially in such a small, interconnected area as Charleston. At the same time, I've been inspired by the resourcefulness and creativity that can emerge out of living on an extremely low budget through recognizing frequently untapped opportunities in the natural and social environment. I hope the experience of living on $4 per day will better prepare me to find ways in which the Charleston community can come together to share goods & skills to ensure that no one is left hungry and subsequently, no food goes to waste.
Typical diet: I eat a vegetarian diet, primarily composed of local vegetables from a CSA share. I eat small snacks throughout the day, therefore I usually have a stocked backpack. My only real dietary restriction is an addiction to coffee.
